A cozy, flavorful roasted side dish combining tender sweet potatoes, baby potatoes, juicy apples, and crunchy pecans. Everything is tossed with warm spices, olive oil, and a touch of maple syrup, then roasted until beautifully caramelized and golden. It’s perfect for fall dinners, Thanksgiving, Christmas, or a comforting family meal.
Ingredients
- 3 medium sweet potatoes, peeled and cubed
- 3–4 baby potatoes, halved
- 2 apples, cored and cut into chunks
- ¾ cup pecans
- 3 tbsp olive oil
- 2 tbsp maple syrup or honey
- 1 tsp cinnamon
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp dried thyme or rosemary
- 2 tbsp butter, melted
- Optional: pinch of nutmeg and a little brown sugar
Instructions
- Preheat oven to 400°F (200°C).
- Place sweet potatoes and baby potatoes in a large bowl. Add olive oil, salt, pepper, paprika, garlic powder, and thyme. Toss well.
- Spread the potatoes on a large baking dish or sheet pan in a single layer.
- Roast for 25–30 minutes, stirring once halfway through.
- Add the apple pieces and pecans. Drizzle with melted butter and maple syrup, then sprinkle with cinnamon and a pinch of nutmeg.
- Return to the oven and roast for another 15–20 minutes, until the potatoes are tender, apples are caramelized, and pecans are toasted.
- Serve warm, with an extra drizzle of maple syrup if desired.
