Ingredients:

  • 1 pound lean ground turkey or chicken sausage
  • 1 cup diced bell peppers (assorted colors)
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/2 cup diced green onions
  • 1 cup reduced-fat shredded cheddar cheese
  • 4 large eggs
  • 1 cup fat-free milk
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly coat a 9-inch pie dish with cooking spray.
  2. In a skillet over medium heat, cook the lean ground turkey or chicken sausage until fully cooked. Drain any excess fat.
  3. In the same skillet, add diced bell peppers and onions. Cook until the vegetables are softened.
  4. In a large mixing bowl, whisk together eggs, fat-free milk, all-purpose flour, baking powder, salt, and pepper until well combined.
  5. Stir in the cooked sausage, diced tomatoes, diced green onions, and reduced-fat shredded cheddar cheese into the egg mixture.
  6. Pour the mixture into the prepared pie dish.
  7. Bake in the preheated oven for 35-40 minutes or until the center is set and the top is golden brown.
  8. Allow the pie to cool for a few minutes before slicing.
