Homemade Airy Chocolate Bites

Ingredients

  • 1 cup milk or semi-sweet chocolate chips (for the center filling/sponge base)

  • 2 tablespoons coconut oil or butter (divided)

  • 3 large eggs (separated into whites and yolks)

  • 1/4 cup granulated sugar

  • 2 tablespoons all-purpose flour or cocoa powder

  • 1.5 cups chocolate chips (for melting and coating the outer shell)

Instructions

  1. Prepare the Molds: Ensure you have a silicone square-cavity chocolate mold ready.

  2. Make the Airy Center:

    • Melt 1 cup of chocolate chips with 1 tablespoon of butter or coconut oil until smooth.

    • Whisk in the egg yolks. Gently fold in the flour (or cocoa powder).

    • In a separate clean bowl, whip the egg whites with the sugar until stiff peaks form. Gently fold the whipped whites into the chocolate mixture to keep it light and airy.

  3. Bake/Set the Center: Pour the batter into a small lined baking dish or individual silicone squares and bake at 175°C (350°F) for about 12–15 minutes until set, then let cool completely before cutting into small squares. (Alternatively, fill silicone mold bases directly if using a cooked mousse/ganache filling).

  4. Create the Chocolate Shell: Melt the remaining 1.5 cups of chocolate chips with the remaining coconut oil until smooth.

  5. Assemble: Coat the bottom and sides of your silicone square molds with a thin layer of melted chocolate, let it set slightly, place the airy chocolate squares inside, and seal the tops with more melted chocolate. Chill in the refrigerator for 30 minutes until completely firm before popping them out to serve.
