Golden Apple Oatmeal Pancakes

Ingredients

  • 1.5 cups rolled oats (or oat flour)

  • 2 medium fresh apples (peeled and grated, plus extra for topping)

  • 2 large eggs

  • 1 cup milk (or dairy-free alternative)

  • 1 teaspoon baking powder

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon ground cinnamon

  • A pinch of salt

  • Butter or oil for cooking

Instructions

  1. Prepare the Batter: If using whole rolled oats, blend them in a food processor or blender until finely ground into a flour-like consistency.

  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs, milk, honey or maple syrup, and ground cinnamon.

  3. Combine: Stir the ground oats, baking powder, and a pinch of salt into the wet mixture until a smooth batter forms. Fold in most of the freshly grated apples, reserving some for garnish.

  4. Cook the Pancakes: Heat a lightly greased skillet or griddle over medium heat. Pour about 1/4 cup of batter per pancake onto the hot surface.

  5. Flip and Brown: Cook until bubbles begin to form on the surface and the edges look set (about 2 to 3 minutes), then flip and cook for another 1 to 2 minutes until golden brown.

  6. Serve: Stack the warm pancakes high on a plate, top with the remaining grated apples, and serve immediately with maple syrup!
