Beef: 3 to 4 lb chuck roast (or beef brisket)

Seasoning Rub:

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Aromatics & Savoriness:

1 tablespoon olive oil (for searing, optional)

4 cloves garlic, minced

1 medium yellow onion, sliced

Cooking Liquid:

1 cup beef broth
-
2 tablespoons Worcestershire sauce

Butter: 2 tablespoons unsalted butter (cut into small pieces to place on top for extra richness)
Instructions

Season the Beef:

Pat the beef roast dry with paper towels. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the spice mixture evenly over all sides of the roast.

Sear (Optional for Extra Flavor):

Heat olive oil in a skillet over medium-high heat. Sear the roast for 2–3 minutes on each side until a nice browned crust forms, then place it into your slow cooker. (If pressed for time, you can skip searing and place the seasoned roast directly into the slow cooker).

Add Aromatics and Liquid:

Scatter the sliced onions and minced garlic around and under the roast in the slow cooker. Pour the beef broth and Worcestershire sauce around the edges of the meat. Dot the top of the roast with the pieces of butter.

Slow Cook:

Cover and cook on LOW for 7 to 8 hours (or on HIGH for 4 to 5 hours), until the beef is fork-tender and practically falling apart.

Slice and Serve:

Carefully remove the roast from the slow cooker, slice it against the grain as shown in the image, and spoon the rich pan juices and melted onions right back over the top before serving.
