Blueberry Almond Baked Oatmeal

Ingredients

  • Oats: 2 cups old-fashioned rolled oats

  • Fruit: 2 cups fresh blueberries (divided—1.5 cups for the mix, 0.5 cup for the top)

  • Nuts: 1/2 cup sliced or slivered almonds

  • Dairy / Liquid: 2 cups milk (dairy or plant-based like almond milk)

  • Eggs: 2 large eggs

  • Sweetener: 1/3 cup pure maple syrup or honey

  • Fat: 3 tablespoons unsalted butter, melted (or coconut oil)

  • Aromatics & Leavening:

    • 2 teaspoons vanilla extract

    • 2 teaspoons ground cinnamon

    • 1 teaspoon baking powder

    • 1/2 teaspoon kosher salt

Instructions

  1. Preheat and Prep:

    • Preheat your oven to 350°F (175°C).

    • Lightly grease a baking dish (such as a 9×9-inch pan or a similar ceramic casserole dish) with a little butter or oil.

  2. Mix the Wet Ingredients:

    • In a large mixing bowl, whisk together the milk, eggs, maple syrup (or honey), melted butter, and vanilla extract until smooth.

  3. Combine Dry Ingredients:

    • Stir the old-fashioned rolled oats, baking powder, ground cinnamon, and salt directly into the wet mixture until fully combined.

  4. Assemble the Bake:

    • Pour half of the oat mixture into your prepared baking dish.

    • Scatter 1.5 cups of the fresh blueberries evenly across the layer.

    • Pour the remaining oat mixture over the berries, then top the entire dish with the remaining 0.5 cup of blueberries and the sliced almonds.

  5. Bake:

    • Place into the oven and bake for 35 to 40 minutes, or until the top is golden brown, the edges are slightly crisp, and the center is fully set.

  6. Serve:

    • Remove from the oven and let it cool for about 10 minutes before slicing and serving warm. Optional: Drizzle with a little extra maple syrup.
