Warm up your dinner table with this comforting Creamy Lasagna Soup, a delicious deconstructed twist on the classic Italian favorite. Packed with savory ground meat, tender lasagna noodle pieces, a rich tomato broth, and a luscious cheesy finish, it delivers all the hearty flavors of traditional lasagna in a cozy bowl.

Ingredients

  • 1 lb ground beef or Italian sausage

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 4 cups beef or chicken broth

  • 2 tablespoons tomato paste

  • 1 teaspoon Italian seasoning

  • 8–10 lasagna sheets, broken into bite-sized pieces

  • ½ cup heavy cream

  • Salt and black pepper to taste

  • For the cheese topping: Ricotta cheese, shredded mozzarella, and grated parmesan

Instructions

  1. Brown the Meat: In a large pot or Dutch oven over medium heat, cook the ground beef or Italian sausage and diced onion until the meat is fully browned. Drain any excess grease.

  2. Build the Flavor: Add the minced garlic and tomato paste, stirring constantly for about 1 minute until fragrant.

  3. Simmer the Broth: Pour in the crushed tomatoes, broth, and Italian seasoning. Season with salt and pepper to taste. Bring the soup to a boil, then reduce heat and let it simmer for about 10 minutes.

  4. Cook the Noodles: Add the broken lasagna pieces directly into the simmering soup. Cook for 8 to 10 minutes, stirring occasionally, until the noodles are tender.

  5. Add Cream and Serve: Stir in the heavy cream and let it heat through for 2 minutes. Ladle into bowls and top each serving with a dollop of ricotta cheese, a handful of mozzarella, and a sprinkle of parmesan for that true lasagna experience!
