This Spinach & Feta Brunch Bake is a rich, fluffy, and satisfying egg casserole packed with tender spinach, creamy feta, and plenty of savory flavor. 🛒 Ingredients

  • 8 large eggs
  • 1 cup milk
  • 5 oz fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ½ tsp paprika
  • 2 tbsp fresh parsley, chopped

1. Prepare the Spinach

2. Prepare the Egg Mixture

In a large bowl, whisk together the eggs and milk until smooth.

Add oregano, dill, paprika, black pepper, and a small amount of salt. Be careful with the salt because feta is naturally salty.

Stir in the cooked spinach and onion mixture.

3. Add the Cheese

Fold in the feta, mozzarella, and Parmesan, reserving a little mozzarella and Parmesan for the top.

Mix gently so the feta remains in small creamy pieces throughout the mixture.

4. Bake

Pour the mixture into the prepared baking dish.

Sprinkle the remaining mozzarella and Parmesan over the top.

Bake for approximately 35–45 minutes, or until the center is set and the top is beautifully golden brown.

A knife inserted into the center should come out mostly clean.

5. Rest and Serve

Remove the bake from the oven and let it rest for 10 minutes before slicing.

Garnish with fresh parsley and a little cracked black pepper.

Cut into squares and serve warm.
