Spinach & Feta Puff Pastry Bake
This golden, flaky Spinach & Feta Puff Pastry Bake is packed with creamy feta, ricotta, mozzarella, and tender spinach wrapped in buttery puff pastry. It’s a delicious dish for breakfast, brunch, lunch, or dinner and tastes just as good warm as it does at room temperature.

🛒 Ingredients
For the Filling
2 sheets frozen puff pastry, thawed
3 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1 cup ricotta cheese
1 cup shredded mozzarella cheese
2 large eggs
1 small onion, finely diced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
½ tsp dried dill (optional)
½ tsp salt
½ tsp black pepper
¼ tsp nutmeg (optional)
For the Topping
1 egg, beaten (egg wash)
1 tbsp sesame seeds (optional)
👩‍🍳 Instructions
Preheat the oven to 375°F (190°C). Grease or line a 9×13-inch baking dish with parchment paper.
Heat the olive oil in a large skillet over medium heat. Sauté the onion for 3–4 minutes until softened.
Add the garlic and cook for 30 seconds until fragrant.
Stir in the chopped spinach and cook for 2–3 minutes, just until wilted. Remove from the heat and allow the mixture to cool.
In a large bowl, combine the feta, ricotta, mozzarella, eggs, oregano, dill, nutmeg (if using), salt, and black pepper.
Fold the cooled spinach mixture into the cheese mixture until well combined.
Lay one sheet of puff pastry into the prepared baking dish, gently pressing it into the corners.
Spread the spinach and cheese filling evenly over the pastry.
Cover with the second sheet of puff pastry. Trim any excess and press the edges together to seal.
Brush the top with the beaten egg and sprinkle with sesame seeds if desired.
Score the top lightly with a sharp knife to allow steam to escape.
Bake for 35–40 minutes, or until the pastry is puffed and deep golden brown.
Let the pie rest for 10–15 minutes before slicing into squares.
