🛒 Ingredients

For the Meatloaf

  • 2 lb ground beef
  • 8 slices bacon, cooked and crumbled
  • 1 cup mushrooms, finely chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 large eggs
  • ½ cup breadcrumbs
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika

Cheese Filling

  • 6–8 slices Swiss cheese
  • ½ cup shredded Swiss cheese, optional

Glaze

  • ½ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard

👩‍🍳 Instructions

  1. Cook the bacon: Fry the bacon until crispy. Drain on paper towels, crumble, and set aside.
  2. Sauté the vegetables: In the same skillet, add the mushrooms and onion. Cook for 5–7 minutes until softened and most of the moisture has evaporated. Add garlic and cook for 30 seconds. Let cool.
  3. Make the meat mixture: In a large bowl, combine ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika. Gently mix in the bacon and cooled mushroom mixture.
  4. Add the cheese: Place half of the meat mixture onto parchment paper and shape it into a rectangle. Arrange Swiss cheese down the center, leaving a border around the edges.
  5. Seal the loaf: Cover with the remaining meat mixture and firmly pinch the edges closed so the cheese stays inside. Shape into a loaf and place in a loaf pan or on a lined baking sheet.
  6. Prepare the glaze: Mix ketchup, Worcestershire sauce, brown sugar, and Dijon mustard.
  7. Bake: Spread half of the glaze over the meatloaf. Bake at 375°F (190°C) for 50–60 minutes.
  8. Finish: Brush with the remaining glaze and bake for another 10–15 minutes, until the internal temperature reaches 160°F (71°C).
  9. Rest and serve: Let the meatloaf rest for 10–15 minutes before slicing. Garnish with fresh parsley if desired.

💡 Pro Tips

  • Cook the mushrooms thoroughly so excess moisture doesn’t make the meatloaf soggy.
  • Use 80/20 ground beef for a juicy result.
  • Don’t overmix the meat mixture.
  • For extra bacon flavor, sprinkle additional crumbled bacon over the top during the last 10 minutes.
  • Let the meatloaf rest before slicing to keep the cheesy center intact.
