Air Fryer Zucchini Chips

If you want a crunchy and cheesy snack without the added guilt of deep-frying, try making these air fryer zucchini chips. It’s also a great way to make use of the abundance of zucchini in your garden! You can serve them with a marinara sauce for dipping.

ingredients:

  • 1 cup of panko bread crumbs
  • ¾ cup of grated Parmesan cheese
  • 1 medium zucchini, thinly sliced
  • 1 large egg, beaten
  • Cooking spray

Directions:

  1. Collect all the necessary ingredients.
  2. Preheat the air fryer to 350°F (175°C).
  3. On a plate, mix the panko bread crumbs and grated Parmesan cheese.
  4. Dip a zucchini slice into the beaten egg, then into the panko mixture, pressing to coat. Place the coated zucchini slice on a wire baking rack and repeat with the remaining slices.
  5. Lightly spray the zucchini slices with cooking spray.
  6. If necessary, work in batches and arrange the zucchini slices in a single layer in the air fryer basket.
  7. Cook the zucchini slices in the preheated air fryer for 10 minutes. Then, flip the slices and cook for an additional 2 minutes.
  8. Repeat the process with the remaining zucchini slices.
