Ingredients

  • Base:

    • 3 to 4 cups cooked brown rice, white rice, or cauliflower rice

  • Beef Layer:

    • 1.5 lbs lean ground beef (90/10 or 85/15)

    • 1/2 medium yellow onion, finely diced

    • 2 cloves garlic, minced

    • 1 tbsp Worcestershire sauce

    • 1 tsp garlic powder, 1 tsp onion powder, salt, and freshly cracked black pepper to taste

  • Toppings & Mix-ins:

    • 1.5 cups shredded cheddar cheese

    • 1 cup dill pickle slices or chips

    • 2 cups shredded iceberg lettuce

    • Diced tomatoes (optional)

    • Chopped chives or green onions (for garnish)

  • Big Mac Special Sauce:

    • 1/2 cup mayonnaise

    • 2 tbsp sweet pickle relish

    • 1 tbsp ketchup

    • 1 tsp white vinegar

    • 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt

Step-by-Step Instructions

  1. Make the Special Sauce: In a small bowl, whisk together all the special sauce ingredients until smooth. Cover and place in the fridge to let the flavors meld.

  2. Cook the Beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook until the beef is fully browned and onions are tender (about 6–8 minutes). Drain any excess grease.

  3. Season the Beef: Stir in the minced garlic, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes until fragrant, then remove from heat.

  4. Assemble the Bowls:

    • Divide your cooked rice evenly among 4 meal-prep glass bowls as the base layer.

    • Add a layer of shredded lettuce and pickles.

    • Spoon the warm seasoned ground beef directly on top.

    • Sprinkle a generous amount of shredded cheddar cheese over the beef (the warmth from the beef will help melt the cheese).
