Ingredients
-
Base:
-
3 to 4 cups cooked brown rice, white rice, or cauliflower rice
-
-
Beef Layer:
-
1.5 lbs lean ground beef (90/10 or 85/15)
-
1/2 medium yellow onion, finely diced
-
2 cloves garlic, minced
-
1 tbsp Worcestershire sauce
-
1 tsp garlic powder, 1 tsp onion powder, salt, and freshly cracked black pepper to taste
-
-
Toppings & Mix-ins:
-
1.5 cups shredded cheddar cheese
-
1 cup dill pickle slices or chips
-
2 cups shredded iceberg lettuce
-
Diced tomatoes (optional)
-
Chopped chives or green onions (for garnish)
-
-
Big Mac Special Sauce:
-
1/2 cup mayonnaise
-
2 tbsp sweet pickle relish
-
1 tbsp ketchup
-
1 tsp white vinegar
-
1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt
-
Step-by-Step Instructions
-
Make the Special Sauce: In a small bowl, whisk together all the special sauce ingredients until smooth. Cover and place in the fridge to let the flavors meld.
-
Cook the Beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook until the beef is fully browned and onions are tender (about 6–8 minutes). Drain any excess grease.
-
Season the Beef: Stir in the minced garlic, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes until fragrant, then remove from heat.
-
Assemble the Bowls:
-
Divide your cooked rice evenly among 4 meal-prep glass bowls as the base layer.
-
Add a layer of shredded lettuce and pickles.
-
Spoon the warm seasoned ground beef directly on top.
-
Sprinkle a generous amount of shredded cheddar cheese over the beef (the warmth from the beef will help melt the cheese).
-
-
Garnish & Store: Top with a drizzle of the homemade Big Mac special sauce and a sprinkle of chopped chives or green onions. Secure the lids if prepping for later days in the fridge, or enjoy immediately!
