Cheddar Broccoli Soup

Here’s a simple and delicious Cheddar Broccoli Soup Recipe:

Ingredients:

  • 2 cups fresh broccoli florets (chopped)
  • 1 cup shredded cheddar cheese
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Optional: Croutons or extra cheese for topping

Instructions:

  1. Sauté Aromatics: In a large pot, melt butter over medium heat. Add onions and garlic, and sauté until fragrant and softened.
  2. Make the Roux: Stir in flour and cook for 1–2 minutes until it forms a paste-like consistency.
  3. Add Broth and Simmer: Gradually whisk in the broth. Add broccoli florets and simmer for 10–15 minutes until tender.
  4. Blend: Use an immersion blender to purée the soup for a creamy texture, or leave it chunky if you prefer.
  5. Add Cream and Cheese: Stir in heavy cream and cheddar cheese until melted and smooth.
  6. Season: Add salt and pepper to taste. Adjust the consistency with additional broth if needed.
  7. Serve: Ladle into bowls, garnish with croutons or extra cheddar cheese, and enjoy!
