Instructions

1. Season the beef
Pat the chuck roast dry. Season all sides with salt, black pepper, smoked paprika, garlic powder, and onion powder.

2. Sear the roast
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef for 2–3 minutes per side until nicely browned.

3. Slow-cook until tender
