Ingredients
For the Fish Bites:

Cajun or Blackened Seasoning: 1.5 tbsp (paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper)

Olive oil: 2 tbsp (for pan-searing)

Butter: 1 tbsp (to finish and add richness)

For the Herbed Tartar Sauce:

Mayonnaise: 1/2 cup

Sweet pickle relish or finely diced dill pickles: 2 tbsp

Lemon juice: 1 tbsp (freshly squeezed)

Fresh herbs (parsley and dill): 2 tbsp, finely chopped

Instructions
1. Prepare the Tartar Sauce

In a small mixing bowl, combine the mayonnaise, pickle relish, lemon juice, Dijon mustard, chopped fresh herbs, and garlic powder.

Stir well until smooth and creamy. Cover and place it in the refrigerator to let the flavors meld while you prepare the fish.
2. Season the Fish

Pat the fish chunks completely dry with paper towels (this ensures a wonderful, crispy crust).

Season the fish pieces evenly on all sides with salt, black pepper, and your Cajun/blackened seasoning blend, pressing gently so the spices adhere.
3. Sear the Fish Bites

Heat the olive oil in a large skillet (cast iron works best) over medium-high heat.

Once the oil is shimmering and hot, add the fish bites in a single layer without overcrowding the pan.

Sear undisturbed for about 2 to 3 minutes until a deep golden-brown crust forms.
