1/4 cup unsalted butter, melted
2 tablespoons sugar
1 cup mashed potatoes (about 2 medium potatoes)
1/2 cup warm milk
2 1/4 teaspoons active dry yeast (1 packet)
4 cups all-purpose flour
1 teaspoon salt
1 large egg, beaten (for egg wash)
PREPARATION:
Activate Yeast:Â In a large mixing bowl, combine warm milk, melted butter, sugar, and yeast. Allow it to sit for 5-10 minutes until the yeast activates and becomes foamy.
Incorporate Potatoes:Â Add mashed potatoes to the yeast mixture and mix thoroughly.
Combine Flour and Salt:Â Gradually add flour and salt to the mixture, stirring until a dough forms.
Knead Dough:Â Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
First Rise:Â Place the dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Shape Rolls:Â Punch down the dough and divide it into equal-sized portions. Shape each portion into a ball and place them in a greased baking pan, leaving some space between each roll.
Second Rise:Â Cover the rolls and let them rise for another 30-45 minutes, or until doubled in size.
Preheat Oven: Preheat your oven to 375°F (190°C).
Brush with Egg Wash:Â Brush the tops of the rolls with beaten egg wash.
