Recipe: Golden Baked Oatmeal Squares

Ingredients

  • Oats: 2 cups rolled oats

  • Liquid Base: 1.5 cups milk (dairy or plant-based)

  • Binding: 2 large eggs

  • Sweetener: 1/4 cup maple syrup, honey, or brown sugar

  • Flavorings: 1 tsp vanilla extract, 1 tsp cinnamon, and a pinch of salt

  • Fat: 2 tbsp melted butter or coconut oil

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C) and lightly grease a glass baking dish.

  2. Combine Dry Ingredients: In the baking dish, spread out the rolled oats evenly. You can also mix in optional add-ins like chopped nuts or berries at this stage.

  3. Mix Wet Ingredients: In a separate bowl, whisk together the milk, eggs, sweetener, melted butter, vanilla extract, cinnamon, and salt.

  4. Pour and Soak: Pour the wet liquid mixture evenly over the oats in the baking dish, making sure all the oats are submerged and moistened.

  5. Bake: Place in the oven and bake for 30 to 35 minutes, or until the top is golden-brown and the liquid has set.

  6. Slice and Serve: Let it cool slightly so it sets into firm squares, then cut and serve warm!
