2 tablespoons lemon juice
Zest of one lemon
2 large eggs

1 cup fresh or frozen blueberries (if using frozen, do not thaw)
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly coat the muffin cups with non-stick cooking spray.
