Lemon pepper wings

Ingredients:

  • 2 lbs chicken wings, split at joints, tips removed
  • 2 tablespoons olive oil
  • 2 tablespoons lemon zest (from about 2 lemons)
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional)
  • 1/2 teaspoon cayenne pepper (optional, for some heat)
  • 2 tablespoons melted butter (optional, for extra richness)
  • Lemon wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, mix together the olive oil, lemon zest, black pepper, salt, garlic powder, and cayenne pepper (if using).
  3. Place the chicken wings in a large mixing bowl and pour the lemon pepper seasoning over them. Toss the wings until they are evenly coated with the seasoning mixture.
  4. Arrange the seasoned wings in a single layer on the prepared baking sheet, making sure they’re not touching each other too closely.
  5. Bake the wings in the preheated oven for 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.
  6. If desired, you can brush the wings with melted butter during the last 10 minutes of baking for extra richness.
  7. Once the wings are cooked through and crispy, remove them from the oven and let them cool for a few minutes before serving.
  8. Serve the lemon pepper wings hot with lemon wedges on the side for squeezing over the top. Enjoy!
