Low-Point Strawberry Poke Cake Recipe

Ingredients:

  • 1 box (approx. 15.25 oz) zero sugar cake mix
  • 3 large eggs
  • 1 cup unsweetened applesauce
  • 1 box (approx. 3 oz) strawberry-flavored gelatin (Jello)
  • 1 container (8 oz) sugar-free Cool Whip
  • 1 lb fresh strawberries, hulled and sliced

Instructions:

  1. Preheat your oven according to the instructions on the cake mix box.
  2. In a large mixing bowl, combine the cake mix, eggs, and unsweetened applesauce. Mix until well combined and smooth.
  3. Grease and flour a 9×13 inch baking pan or dish.
  4. Pour the cake batter into the prepared pan and smooth the top with a spatula.
  5. Bake the cake according to the instructions on the cake mix box, until a toothpick inserted into the center comes out clean.
