Ingredients
For the Meatloaf
- 2½ lb ground beef
- 1 green bell pepper, diced
- 1 medium onion, diced
- 2 tbsp olive oil
- 1 cup Italian-seasoned breadcrumbs
- ½ cup milk
- 2 large eggs
- ¼ cup ketchup
- ¼ cup fresh parsley, chopped
- 1 tbsp Worcestershire sauce
- 1 tbsp garlic powder
- Salt and black pepper, to taste

- ½ cup ketchup
- ½ cup brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt and black pepper, to taste
Instructions
- Preheat the oven:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. - Sauté the vegetables:
Heat olive oil in a skillet over medium-high heat. Add the diced onion and green pepper with a little salt and pepper. Cook until softened, about 5–7 minutes. Let them cool slightly. - Make the meatloaf mixture:
Add the ground beef, sautéed vegetables, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, parsley, garlic powder, salt, and pepper to a large bowl. - Mix gently:
Mix everything together just until combined. Avoid overmixing so the meatloaf stays tender. - Shape the meatloaf:
Place the mixture onto the prepared baking sheet and shape it into a loaf. - First bake:
Bake for about 45 minutes. - Prepare the glaze:
While the meatloaf cooks, mix ketchup, brown sugar, Worcestershire sauce, garlic powder, salt, and pepper in a small bowl. - Add the glaze:
Carefully remove the meatloaf from the oven and spread the glaze evenly over the top. - Finish baking:
Return to the oven and bake for another 15–20 minutes, or until cooked through. For ground beef, the center should reach 160°F (71°C). - Rest and serve:
Let the meatloaf rest for 10 minutes, sprinkle with fresh parsley if desired, then slice and serve.
