A juicy, cheesy meatloaf inspired by the classic Philly cheesesteak! Ground beef is mixed with sautéed onions, bell peppers, and seasonings, then stuffed with melty provolone cheese and baked until beautifully caramelized.

For the Meatloaf

  • 2 lb ground beef
  • 1 small onion, finely diced
  • 1 green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika

Cheesy Filling

  • 6–8 slices provolone cheese
  • ½ cup shredded mozzarella, optional

Glaze

  • ½ cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp yellow mustard

  1. Sauté the vegetables: Heat a little oil in a skillet over medium heat. Add onion and bell pepper and cook for 5–6 minutes until softened. Add garlic and cook for another 30 seconds. Let cool slightly.
  2. Prepare the meat mixture: In a large bowl, combine ground beef, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika. Add the cooled vegetables and gently mix until just combined.
  3. Create the filling: Place about half of the meat mixture onto a sheet of parchment paper and shape it into a rectangle. Layer the provolone cheese down the center, leaving a border around the edges. Add mozzarella if using.
  4. Roll: Carefully place the remaining meat mixture over the cheese. Pinch the edges together firmly so the cheese stays inside. Shape into a loaf and place in a greased loaf pan or on a lined baking sheet.
  5. Make the glaze: Mix ketchup, Worcestershire sauce, brown sugar, and mustard in a small bowl.
  6. Bake: Spread half of the glaze over the meatloaf. Bake at 375°F (190°C) for 50–60 minutes.
  7. Finish: Brush with the remaining glaze and bake for another 10–15 minutes, until the internal temperature reaches 160°F (71°C).
