  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup white wine (optional)

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork chops with salt and pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Brown the pork chops on both sides, about 3-4 minutes per side. Once browned, remove the pork chops from the skillet and set aside.
  5. In the same skillet, add a bit more olive oil if needed. Add the sliced potatoes, onions, and minced garlic. Cook for about 5 minutes until the potatoes start to brown slightly.
  6. Sprinkle the dried thyme and rosemary over the potatoes and onions. Season with salt and pepper to taste.
  7. Nestle the browned pork chops into the potato mixture.
  8. Pour the chicken broth (and white wine if using) over the pork chops and potatoes.
  9. Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the pork chops are cooked through and the potatoes are tender.
  10. If you want the pork chops to have a golden crust on top, you can broil them for an additional 2-3 minutes, keeping a close eye to prevent burning.
  11. Remove from the oven and let it rest for a few minutes before serving.
