QUICK FRIED CHEESE BITES
Ingredients:
- 10 oz mozzarella string cheese (or 10 sticks)
- 1 cup Italian bread crumbs
- 1 cup flour
- 2 eggs
- 1/4 cup milk
- Cayenne pepper (optional)
Directions:
- Begin by cutting the string cheese sticks into bite-sized pieces on a cutting board.
- In a medium-sized bowl, whisk the eggs. Add the milk and whisk again to create an egg mixture.
- Set up two additional bowls—one with flour and the other with bread crumbs. Arrange them in a line: flour, egg mixture, bread crumbs.
- Take each cheese piece and coat it first in flour, then in the egg mixture, and finally in the bread crumbs. Make sure each piece is evenly coated.
- Heat vegetable oil in a skillet to 350°F. You can test the oil’s readiness by using a wooden spoon handle—bubbles should form around it when placed in the oil.
- Fry 5-7 cheese bites at a time for about 30 seconds, making sure they don’t stick together. They should turn a lovely golden brown.
- Using a slotted spoon, remove the bites from the skillet and place them on paper towels to drain any excess oil.
- Repeat the frying process with the remaining cheese bites.
- Serve your hot and crispy mozzarella bites immediately, either with your favorite pasta sauce for dipping or enjoy them as they are.
