Ingredients
For the Salad:

Beets: 3 to 4 medium beets, peeled, roasted, and cut into bite-sized cubes

Chickpeas (Garbanzo Beans): 1 can (15 oz), rinsed and drained

Feta Cheese: 1 cup, crumbled or cut into neat small cubes

Fresh Herbs: 2 tablespoons chopped fresh parsley or mint
For the Dressing:

Extra Virgin Olive Oil: 3 tablespoons

Lemon Juice: 2 tablespoons (freshly squeezed)

Roast the Beets (if using fresh): Preheat your oven to 200°C (400°F). Toss peeled, cubed beets with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for 30–40 minutes until fork-tender. Let them cool. (Note: You can also use pre-cooked canned or vacuum-packed beets to save time).

Combine the Main Ingredients: In a large mixing bowl, combine the cooled roasted beet cubes, rinsed chickpeas, and fresh parsley.

Make the Dressing: In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, balsamic or red wine vinegar, minced garlic, salt, and black pepper until well emulsified.

Dress and Toss: Pour the dressing over the beet and chickpea mixture. Gently toss everything together so the flavors meld and the chickpeas take on a bright, savory coat.

Add the Feta: Gently fold in the crumbled or cubed feta cheese right at the end to keep it from breaking down too much and turning the salad pink.
