Rustic Garlic Herb Bread

Makes: 1 loaf

Ingredients

Dough

  • 3 cups (360 g) all-purpose or bread flour
  • 1¼ cups (300 ml) warm water
  • 2¼ tsp (1 packet) instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil

Garlic Herb Topping

  • 2 tbsp melted butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tsp parsley
  • Flaky sea salt (optional)

Instructions

1. Make the dough

  1. Combine warm water, sugar, and yeast. Let stand for 5–10 minutes until foamy.
  2. Add flour, salt, and olive oil.
  3. Mix until a soft dough forms.

2. Knead

  • Knead for 8–10 minutes until smooth and elastic.
  • Place in a lightly oiled bowl, cover, and let rise for 1–1½ hours, or until doubled.

3. Shape

  • Punch down the dough.
  • Shape into an oval loaf and place on a parchment-lined baking sheet.
  • Cover and let rise another 30–45 minutes.

4. Add the topping

Mix together:

  • Melted butter
  • Olive oil
  • Garlic
  • Thyme
  • Rosemary
  • Parsley

Brush generously over the loaf.

Use a sharp knife to score 3–4 shallow slashes across the top.

5. Bake

  • Preheat oven to 400°F (200°C).
  • Bake for 30–35 minutes, until deep golden brown.
  • The loaf should sound hollow when tapped on the bottom.

6. Finish

Brush with a little more melted butter while still warm for a soft, flavorful crust.

Optional Cheese Version

Before baking, sprinkle ½ cup shredded mozzarella or Parmesan over the top for a cheesy garlic herb loaf.

  • Pair with soups, stews, or pasta.
  • Use for garlic bread or sandwiches.

Tip: For an extra-crusty artisan loaf like the one in the picture, place a pan of hot water on the bottom oven rack while baking to create steam during the first 15 minutes.
