Slow-Cooked Shredded Beef in Rich Brown Sauce

- Season the beef: Pat the chuck roast dry and season generously with salt, pepper, paprika, thyme, and rosemary.
- Sear: Heat olive oil in a large skillet over medium-high heat. Sear the beef for 3–4 minutes per side until deeply browned. Transfer to the slow cooker.
- Build the flavor: In the same skillet, sauté the sliced onion for 3–4 minutes. Add garlic and tomato paste and cook for another minute.
- Deglaze: Pour in the beef broth and Worcestershire sauce, scraping up the browned bits from the bottom of the skillet. Pour everything over the beef.
- Slow cook: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is extremely tender and shreds easily with a fork.
- Shred the beef: Transfer the cooked beef to a plate and shred it with two forks. Remove any large pieces of fat.
- Make the brown sauce: Strain or pour the cooking liquid into a saucepan. Melt the butter in a separate pan, whisk in the flour, and cook for 1–2 minutes. Gradually whisk in about 2 cups of the cooking liquid until smooth and thickened.
