Ingredients
For the Meatloaf
- 2 lb ground beef
- 1 cup breadcrumbs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- ¼ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp yellow mustard
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
For the Filling & Topping
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 8–10 slices bacon, cooked until crisp and chopped
For the Glaze
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
Instructions
- Preheat the oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, mustard, salt, pepper, garlic powder, and onion powder.
- Mix gently with your hands until everything is evenly combined. Avoid overmixing to keep the meatloaf tender.
- Place about half of the meat mixture onto the prepared pan and shape it into a thick loaf.
- Make a shallow well down the center and fill it with the cheddar and mozzarella cheese.
- Cover completely with the remaining meat mixture, sealing the edges so the cheese stays inside.
- Mix the glaze ingredients together and spread about half over the top of the meatloaf.
- Bake for 40 minutes.
- Remove from the oven and cover the top generously with the crispy chopped bacon. Brush with the remaining glaze.
- Return to the oven and bake for another 15–20 minutes, or until the meatloaf reaches 160°F (71°C) internally.
- Let it rest for 10–15 minutes before slicing. This helps the melted cheese stay inside rather than running out immediately.
- Garnish with a little chopped parsley and serve hot.
💡 Pro Tips
- Use 80/20 ground beef for a juicy, flavorful meatloaf.
- Don’t overmix the beef mixture.
- Seal the cheese completely inside the loaf.
- For an extra cheeseburger flavor, add diced pickles or a little finely chopped cooked onion to the mixture.
- Let the meatloaf rest before slicing for cleaner, cheesier pieces.
