🛒 Ingredients

For the onion bombs:

  • 2 large sweet onions
  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 2 cloves garlic, minced
  • 2 tbsp finely diced onion
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ½ tsp salt

Firecracker glaze:

  • ¼ cup ketchup
  • 2 tbsp BBQ sauce
  • 1 tbsp hot sauce
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce
  • ½ tsp smoked paprika

👩‍🍳 Instructions

  1. Prepare the onions:
Cut the tops and bottoms from the onions and carefully peel away the outer layers. Separate the onions into individual shells, keeping the larger, sturdy layers intact. You’ll need about 8–10 onion shells.
  2. Make the cheeseburger filling:
In a large bowl, combine ground beef, crumbled bacon, cheddar cheese, garlic, diced onion, Worcestershire sauce, ketchup, mustard, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix gently until everything is evenly combined.
  3. Stuff the onions:
Take a portion of the beef mixture and form it into a ball that fits snugly inside an onion shell. Continue until all the filling is used.
  4. Wrap with onion layers:
Carefully place another onion layer around each stuffed portion, creating a sealed “bomb.” If needed, use toothpicks to hold the layers together.
  5. Make the glaze:
Stir together ketchup, BBQ sauce, hot sauce, brown sugar, Worcestershire sauce, and smoked paprika.
  6. Bake:
Place the onion bombs in a lightly greased baking dish or on a lined baking sheet. Brush generously with the firecracker glaze.

Bake at 375°F (190°C) for 35–45 minutes, brushing with additional glaze halfway through. The beef should reach 160°F (71°C) in the center.

  7. Finish with cheese:
During the final 5 minutes, sprinkle a little extra cheddar over the tops and return to the oven until melted and bubbly.
  8. Rest and serve:
Let the onion bombs rest for about 5 minutes before serving. Remove toothpicks and drizzle with extra sauce if desired.

🌶️ Pro Tips

  • Use large yellow or sweet onions because their layers are easier to separate.
  • Don’t overfill the onion shells—the beef mixture expands slightly as it cooks.
  • For extra heat, add crushed red pepper flakes or diced jalapeños to the filling.
  • A combination of sharp cheddar and pepper jack makes these especially delicious.
  • Serve with ranch, spicy mayo, or extra BBQ sauce for dipping.

🍽️ Serving Ideas

Serve these juicy onion bombs as an appetizer with fries, coleslaw, potato wedges, or a crisp green salad. They also make a fantastic game-day snack alongside other finger foods.
