Slow Cooker Mini Meatloafs and Roasted Potatoes

Slow Cooker Mini Meatloafs and Roasted Potatoes
Description

These Slow Cooker Mini Meatloafs and Roasted Potatoes are the ultimate comfort-food dinner when you want something hearty, flavorful, and easy to prepare. Instead of making one large meatloaf, the ground beef mixture is shaped into individual mini meatloaves, allowing each serving to cook beautifully and soak up plenty of savory flavor.

The meatloaves are seasoned with onion, garlic, Worcestershire sauce, breadcrumbs, and Parmesan, then topped with a simple sweet-and-savory tomato glaze. Tender baby potatoes cook alongside them, absorbing the delicious juices and seasonings as everything slowly cooks together.

This is a wonderful recipe for busy weeknights because the slow cooker does most of the work. Serve the mini meatloaves with the roasted potatoes and your favorite green vegetable for a complete, satisfying meal.

Ingredients
For the Mini Meatloaves
1½ pounds ground beef
½ small onion, finely diced
2 cloves garlic, minced
1 large egg
½ cup breadcrumbs
¼ cup milk
¼ cup grated Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
For the Glaze
½ cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon apple cider vinegar
For the Potatoes
1½ pounds baby potatoes, halved
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
Instructions
1. Prepare the Meatloaf Mixture

In a large bowl, combine the ground beef, diced onion, minced garlic, egg, breadcrumbs, milk, Parmesan cheese, Worcestershire sauce, Italian seasoning, salt, pepper, and smoked paprika.

Mix gently with your hands or a wooden spoon until everything is just combined. Avoid overmixing, as this can make the meatloaves dense.

2. Shape the Mini Meatloaves

Divide the mixture into approximately 6 equal portions. Shape each portion into a small oval-shaped meatloaf.

Set the mini meatloaves aside while you prepare the potatoes and glaze.

3. Season the Potatoes

Place the halved baby potatoes in a bowl. Add olive oil, garlic powder, Italian seasoning, paprika, salt, and black pepper.

Toss until the potatoes are evenly coated.

4. Make the Glaze

In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, mustard, and apple cider vinegar.

The glaze should be smooth and slightly sweet with a tangy flavor.

5. Arrange Everything in the Slow Cooker

Lightly grease the bottom of a 6-quart slow cooker.

Arrange the seasoned potatoes around the edges and bottom of the slow cooker. Place the mini meatloaves in the center, leaving a little space between them if possible.

Spoon the glaze generously over the tops of the meatloaves.

6. Slow Cook

Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, depending on the size of the meatloaves and your slow cooker.

The beef should reach an internal temperature of 160°F (71°C) for food safety.

Try not to repeatedly lift the lid during cooking because this releases heat and can increase the cooking time.

7. Optional Finishing Step

For a thicker, slightly caramelized glaze, carefully transfer the cooked mini meatloaves to a baking sheet.

Brush them with a little additional glaze and place them under the broiler for 2–3 minutes, watching closely until the tops become glossy and caramelized.

8. Serve

Let the meatloaves rest for about 5 minutes before serving.

Arrange one or two mini meatloaves with the tender roasted potatoes on each plate. Garnish with chopped fresh parsley if desired.

Serve with steamed green beans, broccoli, peas, or a crisp side salad.

Helpful Tips

Don’t overmix the beef: Gentle mixing produces softer, more tender meatloaves.

Use baby potatoes: They cook more evenly and require very little preparation.

Cut larger potatoes: If your potatoes are larger than baby potatoes, cut them into smaller, evenly sized pieces so they cook at the same rate.

Add extra glaze: If you love a saucy meatloaf, reserve some glaze and brush it on during the final 20–30 minutes.

Check the temperature: Slow cookers vary, so use an instant-read thermometer to make sure the center of the meatloaves reaches 160°F (71°C).

Storage

Store leftover meatloaves and potatoes in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave or in a covered skillet until heated through.

The cooked mini meatloaves can also be frozen. Allow them to cool completely, wrap individually, and freeze for up to about 2–3 months for best quality.
