🧀 Ingredients
- 8 large eggs
- 1 cup ricotta cheese
- ½ cup shredded mozzarella
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 6 slices bacon, cooked and crumbled
- ½ small onion, finely diced
- 2 cloves garlic, minced
- ½ cup milk or heavy cream
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes, optional
- 1 tbsp olive oil or butter
- Extra Parmesan for topping

- Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
- Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate, crumble, and set aside.
- In the same skillet, add the olive oil and sauté the onion for 2–3 minutes. Add garlic and spinach and cook until the spinach wilts. Remove from heat.
- In a large bowl, whisk together the eggs, ricotta, mozzarella, Parmesan, and milk until well combined.
- Stir in the cooked spinach mixture and about ¾ of the bacon. Season with salt, pepper, Italian seasoning, and red pepper flakes.
- Pour the mixture into the prepared baking dish. Sprinkle the remaining bacon and a little Parmesan over the top.
- Bake for 35–45 minutes, until the center is set and the top is golden brown.
- Let it rest for 10 minutes before slicing. Serve warm.
