🧀 Ingredients

  • 8 large eggs
  • 1 cup ricotta cheese
  • ½ cup shredded mozzarella
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 6 slices bacon, cooked and crumbled
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup milk or heavy cream
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flakes, optional
  • 1 tbsp olive oil or butter
  • Extra Parmesan for topping

👩‍🍳 Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
  2. Cook the bacon in a skillet until crisp. Transfer to a paper towel-lined plate, crumble, and set aside.
  3. In the same skillet, add the olive oil and sauté the onion for 2–3 minutes. Add garlic and spinach and cook until the spinach wilts. Remove from heat.
  4. In a large bowl, whisk together the eggs, ricotta, mozzarella, Parmesan, and milk until well combined.
  5. Stir in the cooked spinach mixture and about ¾ of the bacon. Season with salt, pepper, Italian seasoning, and red pepper flakes.
  6. Pour the mixture into the prepared baking dish. Sprinkle the remaining bacon and a little Parmesan over the top.
  7. Bake for 35–45 minutes, until the center is set and the top is golden brown.
  8. Let it rest for 10 minutes before slicing. Serve warm.
