Ingredients:
- For the Pudding:
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
For the Coffee Syrup:
- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 2 tablespoons granulated sugar
- For the Assembly:
- 20-24 ladyfinger cookies
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings (optional)
- Fresh berries or mint leaves, for garnish (optional)
Instructions:
- Prepare the Pudding:
- In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract.
- Beat with an electric mixer until the mixture is smooth and thick. Set aside.
- Make the Coffee Syrup:
- In a small bowl, combine the cooled brewed coffee, coffee liqueur (if using), and sugar.
- Stir until the sugar is dissolved.
- Assemble the Tiramisu Cups:
- Break the ladyfinger cookies in half, if needed, to fit into your serving cups.
- Quickly dip each piece of ladyfinger into the coffee syrup, making sure they are soaked but not overly saturated.
- Layer the soaked ladyfingers at the bottom of each serving cup.
- Add a layer of the mascarpone pudding mixture over the ladyfingers.
- Repeat the layers until the cups are filled, finishing with a layer of the pudding mixture on top.
- Chill and Serve:
- Cover the assembled cups with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
- Before serving, dust the top of each cup with unsweetened cocoa powder and add dark chocolate shavings, fresh berries, or mint leaves for garnish if desired.
