½ cup creamy peanut butter

½ cup granulated sugar

½ cup packed light brown sugar
-
1 large egg
-
1 tsp vanilla extract
-
1 ½ cups old-fashioned rolled oats
-
1 cup all-purpose flour
-
½ tsp baking soda
-
¼ tsp salt
-
½ cup semi-sweet chocolate chips
-
½ cup peanut butter chips (or white chocolate chips)
Instructions

Prep the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Add Wet Ingredients: Beat in the egg and vanilla extract until fully incorporated.

Mix Dry Ingredients: In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low just until combined.

Scoop and Shape: Scoop large balls of dough (about 3 tablespoons each) and place them a few inches apart on the prepared baking sheet.
-
Bake: Bake for 10 to 12 minutes, or until the edges are golden brown and the centers are still soft.
-
Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
