Egg Roll in a Bowl Recipe

  • Prep time: 10 minutes

  • Cook time: 15 minutes

  • Servings: 4

Ingredients

  • 1 lb ground pork or ground beef

  • 1 tbsp sesame oil

  • 1 medium yellow onion, diced

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 bag (14 oz) coleslaw mix (shredded cabbage and carrots)

  • 3 tbsp soy sauce (or tamari)

  • 1 tbsp rice vinegar

  • 1 tsp sriracha or Asian chili garlic sauce (optional, for heat)

  • ½ tsp ground black pepper

  • 3 green onions, sliced (for garnish)

Instructions

  1. Brown the Meat: Heat a large skillet or wok over medium-high heat. Add the ground pork or beef and cook, crumbling it with a wooden spoon, until completely browned and cooked through. Drain excess grease if necessary.

  2. Sauté Aromatics: Add the sesame oil and diced onion to the skillet with the meat. Cook for 3 to 4 minutes until the onions become soft and translucent.

  3. Add Garlic & Ginger: Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.

  4. Wilt the Cabbage: Add the coleslaw mix (shredded cabbage and carrots) directly into the skillet. Toss everything together.

  5. Season: Pour in the soy sauce, rice vinegar, sriracha (if using), and black pepper. Stir well to coat the vegetables.

  6. Simmer: Cover the skillet with a lid and let it cook for 5 to 7 minutes, stirring occasionally, until the cabbage has softened and reduced to your desired texture.

  7. Garnish and Serve: Remove from heat, top with fresh sliced green onions, and serve warm.
