Ingredients
-
Eggs: 6 large eggs
-
Dairy: 2 to 3 tablespoons milk or heavy cream (optional, for extra fluffiness)
-
Green Onions (Scallions): 1/2 cup, finely chopped
-
Cheese: 1/2 cup shredded cheddar, mozzarella, or your favorite cheese (optional)
-
Seasoning:
-
Salt and black pepper (to taste)
-
A pinch of garlic powder or paprika (optional)
-
-
Greasing: Butter or cooking spray for the muffin tin
Instructions
-
Preheat the Oven:
-
Preheat your oven to 350°F (175°C).
-
-
Prepare the Muffin Tin:
-
Generously grease a standard 6-cup muffin tin with butter or non-stick cooking spray to prevent the eggs from sticking.
-
-
Add Fillings:
-
Divide the finely chopped green onions evenly among the 6 muffin cups. If using shredded cheese, add it right into the cups along with the onions.
-
-
Mix the Eggs:
-
In a medium bowl, whisk together the eggs, milk (if using), salt, pepper, and any additional seasonings until smooth and well-combined.
-
-
Pour into Muffin Cups:
-
Carefully pour the egg mixture into each muffin cup over the green onions, filling them up about 3/4 full.
-
-
Bake:
-
Bake in the preheated oven for 15 to 20 minutes, or until the egg cups are completely set and slightly golden brown on top.
-
-
Cool and Serve:
-
Let them cool in the pan for a few minutes. Run a knife gently around the edges of each cup to pop them out. Serve warm and enjoy!
