  • Cucumbers: 2 to 3 medium cucumbers (English or Persian cucumbers work best, sliced into rounds or half-moons)

  • Tomatoes: 3 to 4 ripe vine tomatoes or 1.5 cups of cherry/grape tomatoes, chopped or sliced

  • Onion: 1/2 medium red onion or sweet white onion, thinly sliced (into half-moons or thin slivers)

  • Herbs: 2 tablespoons fresh parsley or dill, finely chopped (optional)

  • Dressing:

    • 3 tablespoons extra virgin olive oil

    • 1.5 to 2 tablespoons red wine vinegar (or apple cider vinegar/fresh lemon juice)

    • 1 clove garlic, minced (optional)

    • 1 teaspoon honey or maple syrup (optional, to balance the acidity)

    • Salt and freshly cracked black pepper to taste
