W/W Loaded Greek Chickpea Salad
Ingredients:
- 2 cups cooked chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine the cooked chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and fresh parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour the dressing over the salad ingredients.
- Gently toss the salad until all the ingredients are well coated with the dressing.
- Allow the salad to marinate in the refrigerator for at least 30 minutes to let the flavors meld together.
