Ingredients

  • All-Purpose Flour (or Bread Flour): 3 cups (plus extra for dusting)

  • Active Dry Yeast: 2 teaspoons

  • Warm Water: 1 cup (lukewarm, not hot)

  • Sugar or Honey: 1 teaspoon (to activate the yeast)

  • Olive Oil or Melted Butter: 2 tablespoons

  • Salt: 1 teaspoon

Instructions

  1. Activate the Yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for 5–10 minutes until it becomes frothy and bubbly.

  2. Make the Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.

  3. Knead: Turn the dough out onto a clean, lightly floured surface. Knead for about 8–10 minutes until it becomes smooth, elastic, and slightly tacky. (You can also use a stand mixer with a dough hook attachment for 5–7 minutes).

  4. First Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

  5. Divide and Shape: Punch down the dough and transfer it to a lightly floured surface. Divide it into 8 to 10 equal portions and roll each into a smooth ball. Let the balls rest covered for 10 minutes so the gluten relaxes.

  6. Roll Out: Roll each ball out into a flat, round or oval disc about 1/4-inch thick (as seen on the baking sheet in the top photo).

  7. Cooking Options:

    • Baking Method (Recommended for the top photo look): Place the rolled dough on a parchment-lined baking sheet. Bake in a preheated oven at 230°C (450°F) for about 8–10 minutes until puffed up and lightly golden on top.

    • Skillet Method: Alternatively, cook them on a hot, ungreased cast-iron skillet over medium-high heat for about 1-2 minutes per side until puffed and nicely browned spots appear.

  8. Serve: Keep the cooked flatbreads wrapped in a clean kitchen towel immediately after cooking to trap the steam and keep them ultra-soft.
