Tomato Cucumber Avocado Salad Recipe

2 tomatoes chopped
1 cucumber chopped
1/2 red onion sliced
1 avocado chopped
1/2 bunch parsley chopped
1 tbsp extra-virgin olive oil
1/4 lemon squeezed
Salt and pepper to taste


Put olive oil and lemon juice in a cup and whisk with a fork to make a dressing.
Put tomatoes, cucumber, onion, avocado and parsley in a large bowl. Pour dressing over it and sprinkle with salt and pepper to taste. Toss to combine.
